I tried making Emeril Lagasse's Simple Balsamic Vinaigrette and loved it. It is so simple to make. It's great for summertime salads!

INGREDIENTS:
1/4 cup of balsamic vinegar
2 teaspoons of dark brown sugar (I use 2 packets of a sugar substitute)
1 tablespoon chopped garlic
1/2 teaspoon salt
1/2 teaspoon black pepper
3/4 cup of olive oil
DIRECTIONS:
Place all of the above ingredients in a screw-top jar and shake it to combine. Toss 2 tablespoons of the dressing with a salad. Refrigerate unused dressing, shaking again before every use.
