1 cup fresh spinach
4 egg whites
2 tbsp reduced-fat feta cheese, crumbled
Makes 1 serving.
- Lightly coat a nonstick skillet with cooking spray and place over medium heat. Saute spinach until it wilts, about 2-3 minutes.
- Whisk egg whites until blended. Pour over the spinach and stir until eggs are set. Sprinkle with feta cheese. Add a side serving of your favorite fruit. Breakfast is served.
