We took a drive to Douglasville to see the Physician Center that Clint works at. He still works at the Wellstar Hospital in Marietta once a week, but the rest of the week he works in this nice facility, much closer to home. His office is located on the second floor. In the picture below his office window is on the left side, under the #6001.
I can't get over how beautiful the daffodils are in the backyard. They are screaming SPRING. :)
My March "nutritional madness" is in full swing. My diet consists largely of plant based foods, whole grains, nuts and seeds but I do incorporate an animal protein source into the dinner meal. I also eat dairy products... cheese and Greek yogurt. Some of the positive effects I am experiencing so far... an increase in energy, clearer mind, and weight loss.
Taco salad using lots of veggies, lean ground beef, and my own taco seasoning that I used sparingly, coupled with a sweet potato.
Chicken teriyaki - the healthy version- I used chicken breast, fresh broccoli that I blanched for five minutes, basmati rice. I used a low sodium soy sauce, cornstarch, fresh garlic, vinegar, water and a little bit of brown sugar for the sauce.
A light, refreshing lunch - fresh garden salad with dark greens, sliced cucumbers, sweet peppers, chopped tomatoes, feta cheese and roasted, unsalted sunflower seeds.
My favorite healthy lunch - a fresh side salad, black beans, veggies and rice, topped with a tablespoon of sharp cheddar cheese. A little bit of hot sauce, vinegar, and garlic adds a little kick to the beans.
