Grocery Shopping - Meal Planning & Prep

I just finished up writing out the menu of meals that I plan to make for next week. It is far from fancy! I start the planning process simply by looking back over the notes that I had made of the meals that were planned the last several weeks and use that data to formulate a new plan. I don't really "assign" meals to particular days except for pizza on Friday nights, and that is only because my kids like pizza on Friday night because it goes well with their "movie" night plans. I plan what meals I'm going to make for the week and make sure I have all of the ingredients on hand but decide on a daily basis which one of those meals I will actually make.

It is a simple but sloppy process. 

I collected my coupons and went grocery shopping yesterday. So glad that's done and out of the way!

Last week was definitely a "chicken" kind of week because the grocery store that I shop at was having a major deal on chicken breast. I was able to snag chicken for $.99 per pound! Needless to say, we had chicken for almost every evening meal but Friday pizza night! I made my own take on chicken parmesan, chicken fajitas and a simple chicken stir fry. Hubby even made an awesome chicken sandwich for us one evening too!

This week I went to Sam's Club for lean ground turkey breast that I purchased for $2.75 per pound and prepped the meat for several meals I plan to make next week. A little bit of time preparing the turkey for those meals today is going to make meal prep go quicker throughout the week.

I mixed up all the ingredients for my meatloaf and meatballs and put them in the freezer, cooked the turkey for my chili and formed the burgers for cheese burgers this week. Everything went into the freezer for later use. An additional chicken meal or two in between and pizza for Friday night completes my meal planning and prepping for the coming week ahead. 

Hopefully there will be plenty of leftovers to have for lunch too! ;o)
