I tried making Emeril Lagasse's Simple Balsamic Vinaigrette and loved it. I use it everyday on salads. It is so simple to make. All you need is 1/4 cup of balsamic vinegar, 2 teaspoons of dark brown sugar (I use 2 packets of a sugar substitute), 1 tablespoon chopped garlic, 1/2 teaspoon salt, 1/2 teaspoon black pepper, 3/4 cup of olive oil. I place all of the above ingredients in a screw-top jar and shake it to combine. Toss 2 tablespoons of the dressing with the salad. Refrigerate unused dressing, shaking again before every use.
Clint has been grilling our dinners outdoors every night this week. It is so nice to keep the heat of cooking dinner OUT of the house. It is hot enough down here as it is! :) He did a great job grilling the salmon and veggies. The nice thing about this meal (pictured below) is that you can have it on the table within ten minutes.
