Yesterday I shared an easy Christmas candy to make, homemade peppermint patties. Today I'm back again to share two very simple ways to take any boxed brownie that you bake and decorate it to make it into a festive treat for the holidays. #1 Christmas tree brownies - simply cut out triangle shapes, add a candy cane trunk, squeeze on some icing and add festive sprinkles. #2 Christmas brownie squares - cut brownies into squares, use templates to sprinkle snow (powdered sugar) or simply add a layer of icing and sprinkles to give your brownies a festive flair.

Welcome to my holiday baking series. I've been sharing our family's favorite Christmas cookie recipes in my previous posts. Today I'm sharing an easy Christmas candy to make... cool, minty, refreshing peppermint patties. PEPPERMINT PATTIES
Makes 24 Ingredients • 3/4 cup sweetened condensed milk • 1 1/2 teaspoons peppermint extract • 3 to 4 cups powdered sugar • 3 cups semi-sweet chocolate chips • 2 teaspoons shortening Instructions 1. In a large mixing bowl, combine sweetened condensed milk and peppermint extract. 2. Beat in the powdered sugar just a little at a time, until a stiff dough starts to form and the dough isn't sticky. (It took about 3 cups to form the dough.) 3. Form into 1 inch balls, then place on waxed paper and flatten with fingers to form patties. Let them air dry for an hour. Place them in the freezer for about an hour before dipping them in the melted chocolate. It makes it easier to deal with. 4. In a medium saucepan over low heat, melt chocolate with shortening, stirring often (you could also just melt the chocolate & shortening in the microwave). 5. Remove chocolate from heat. 6. Dip patties, one at a time, into chocolate by laying them on the tines of a fork and lowering the fork into the liquid. 7. Let cool on waxed paper until set. Place in the fridge to let them set-up even faster. Welcome to my holiday baking series. Today I'm sharing one of my family's favorite Christmas cookie recipes. The delicate, delicious little bites of crumbly, nutty, buttery cookie coated with pure sweetness... the pecan sandies. They are simply delightful! PECAN SANDIES
1 cup butter 1/3 cup granulated sugar 1 teaspoon vanilla 2 1/4 cups all-purpose flour 1 cup chopped pecans 1 cup sifted powdered sugar 1. Beat butter with a mixer on medium to high speed 30 seconds. Add granulated sugar. Beat till combined, scraping bowl. Beat in 1 tablespoon water and vanilla till combined. Beat in as much flour as you can with the mixer. Stir in remaining flour and pecans. 2. Shape dough into 1-inch balls. Place 1 inch apart on an ungreased cookie sheet. Bake in a 325 oven 20 minutes or till bottoms are lightly browned. Transfer to a rack; cool. Gently shake cooled cookies in a plastic bag with powdered sugar. Makes about 36 cookies. |
